In addition to the 5.5 hectares of coffee cultivation area, the adjacent 2-hectare forest is a natural forest that they intentionally do not touch in order to protect nature and animals. Various bird calls can be heard from such a farm.
The farm has many coffee trees over 30 years old that were planted during Gerardo's time. For many years, they have not used herbicides to protect the soil, nor have they used chemicals to remove the coffee berry borer. If any berries are damaged and fall due to the borer, they are all removed by hand to prevent further damage.
This kind of manual maintenance costs far more than purchasing herbicides and insecticides, but they still do this primarily out of respect for Gerardo's wishes and to protect the farm. Indeed, handmade coffee production still thrives at Finca Legados.
