Message
I had set my sights on becoming a world-class snowboarder, but a serious injury forced me to give up my dream. In the midst of this despair, I came across coffee and fell in love at first sight. Captivated by the power of a cup of coffee, in 2013 I traveled alone to Australia, a country that is a pioneer in coffee.
He took on new challenges despite having no prior experience, and was recognized worldwide as the first Japanese person to become an Australian Latte Art Champion.
In August 2020, Samurai Dream Co., Ltd. was founded with the concept of "a company that makes dreams come true," and in 2021, "BARISTA MAP Coffee Roasters" was launched, delivering coffee experiences from a small roastery of just 1.8 tsubo (5.5 m2) with the concept of "a roastery that connects coffee and people."
My goal is not just to provide delicious coffee, knowledge, and techniques. I want to create a community where people can meet, grow, talk, and share their dreams through coffee experiences. I will work to increase the value of baristas, revitalize local communities, and nurture the next generation, spreading excitement and prosperity to society through coffee.

What we value most is overwhelming flavor and the baristas who deliver it.
We travel to coffee-producing countries around the world to select the highest grade specialty coffee beans, roast them in-house, and use an extraction method that brings out the best in the ingredients, ensuring that our coffee can be enjoyed by a wide range of people, from beginners to aficionados.
Another major strength is our baristas. Not only do they hone their skills daily and have won championships, but they also have the professionalism to connect people through coffee and create comfortable moments. Since 2016, we have been running the SAMURAI SHIN Training School, which has trained over 6,000 people by 2025, producing many award-winning baristas.

Shinsaku Fukayama
Founder & CEO
Shinsaku Miyama is a unique figure, having gone from being a competitive snowboarder to becoming a world champion. After giving up his competitive career due to a serious injury, he became fascinated with coffee and moved to Australia in 2013. Starting with no prior experience, he trained hard and in 2018 became the first Japanese person to be crowned Australian Latte Art Champion, and also achieved top rankings at world competitions. After returning to Japan, he launched BARISTA MAP Coffee Roasters in Osaka, running a barista school that has trained over 6,000 people. He has also launched the roastery BAISEN and a new business called KOME MAME, selling rice balls and coffee, and is committed to nurturing the next generation, advancing coffee culture, and increasing the value of baristas.
Emi Ito
General Manager
A barista with an unusual background as a former emergency room nurse, she took advantage of a working holiday to travel to Melbourne, the mecca of coffee, with the aim of working in the coffee industry she had always loved. While there, she studied at a coffee school run by CEO Shinsaku Miyama, honing her skills and fundamentals as a barista. After returning to Japan, she gained further experience at Starbucks Reserve Bar, and is currently active as a member of BARISTA MAP Coffee Roasters. She was runner-up at JBrC 2024 and advanced to the finals again this year in 2025, aiming to become the best barista in Japan and the world. Her skills are undeniable.
