■ Cafe Granja La Esperanza, the prestigious Colombian top specialty

Café Granja La Esperanza is a household name in the specialty coffee industry. Located in the Valle del Cauca region in central-western Colombia, it is known as the first producer to plant Geisha coffee in Colombia, and is a producer group worthy of its prestigious name, producing high-quality coffee every year.

It all began in 1945 when Juan Antonio Herrera and his wife started cultivating three varieties of coffee – Yellow Bourbon, Red Bourbon, and Caturra – on the Potosi farm where they worked. This led to the creation of Cafe Granja La Esperanza.

In order to further expand cultivation, the company acquired La Esperanza Farm in the Trujillo region.

■Hybrid Wash

This Geisha grape is processed using a method called Hybrid Wash (HB), which uses very little water during processing. This is their original processing method, which aims to achieve both the cleanness of "Wash" and the fruitiness of "Natural". The method is as follows.

1. Selected ripe cherries are fermented for 19 to 22 hours.
2. After pulping, dry fermentation is carried out for approximately 35 hours with mucilage attached.
3. After the fermentation in step 2 is complete, the parchment is washed and dried under temperature control by machine until the moisture content reaches approximately 10.5%.

By taking the time to refine the coffee in this way, this lot has been transformed into a special coffee that combines the refreshing acidity of lime and orange with a subtle hint of berry flavor.
