Las Uvas Farm

Marina Ramirez, who runs Las Uvas Farm, is one such small-scale producer, having started coffee production around 2003. Through a specialty coffee production program, the entire Cheguite region has united, and each household has worked together towards the goal of producing micro-lots. She expresses immense gratitude to Ronnie Games, who not only helped with quality and production techniques but also connected them with global buyers. In cultivation, the farm uses only organic fertilizers, focusing on soil improvement and growth, and properly pruning and cleaning the farm. By keeping the trees in excellent condition at all times, the cherries mature in an ideal state, contributing to improved flavor.
Currently, they meticulously ensure the ripeness of the cherries at harvest, remove floaters and damaged cherries, and strive for high ripeness and uniformity. Although the meticulous sorting process means working late into the night on harvest days, they always depulp the cherries on the same day to prevent damage and place them in fermentation tanks. After a 30-hour fermentation process, they are washed and finished with 25 days of slow drying. During harvesting, no effort is spared to improve quality, and meticulous attention is paid to scheduling the entire process. Although the work continues from early morning to late night, they believe that quality never lies. They express their desire to continue making improvements so that their coffee can continue to be sold in the specialty coffee market.
