El Roblar Farm
El Roblar Farm is located in the southern part of Comayagua Department, on the border with La Paz Department. It is geographically high, with an altitude of 1500-1700m, and has a microclimate with relatively high rainfall and an excellent balance of temperature due to warm air from the Caribbean Sea blowing in from the northeast valley and cold air from the mountains. At El Roblar Farm, temperatures drop to 15℃ at night, making it characterized by a greater temperature difference than its altitude suggests. In addition, the fertile soil, a mixture of sandy calcareous soil and clayey soil, allows for good root development and a balanced combination of water retention and drainage.
The farm has a history of over 50 years, dating back to the generation of Rosa Dimas' father. When the previous generation first started production, there was no equipment, and they began by removing the pulp with wooden sticks, drying it on natural rock patios, and selling it at local markets. Around 2010, they shifted to specialty coffee production, and in 2012, they won their first Cup of Excellence award. The farm area, which was 1 hectare until 2009, has expanded to 10 hectares in the last 10 years, and they now produce on two adjacent plots, Roblar Farm and Roble Farm.
