SAVAGE COFFEE
SAVAGE COFFEE is a team of coffee producers from small farms in Volcán and Boquete in Chiriquí Province, located in the northern highlands of Panama. Founder Jamison Savage purchased farmland in Volcán in 2005 and established Finca Deborah in 2008, exclusively producing Geisha varieties. With a mission to redefine the coffee experience, he has been a pioneer in innovative processing methods. He is also widely known as the first producer to commercially introduce carbonic maceration, a fermentation process that is now spreading globally.
The various processes he independently develops are inspired by the wine industry, which he respects. He applies cultivation methods, carbonic maceration, and anaerobic techniques to coffee production, bringing out new and unique flavors. By also committing to the natural environment of the farm and the health of the trees, he achieves sustainable, responsible, and terroir-focused coffee production.
