Processing at Gravfarm
For specialty coffee production, dry hull (washed) is the main method, and honey process and natural methods are also being experimentally introduced. In Indonesia, there are unique process names: Wet Hull and Dry Hull. In both, the pulping, fermentation, and washing processes after harvesting are the same, but the handling of parchment coffee differs.
In Wet Hull, parchment coffee is initially dried before hulling. Then, the green beans undergo final drying, which is a washed process. This refers to the traditional Sumatra process.
On the other hand, in Dry Hull, parchment is dried to a final moisture content of 12.5% and then moved to the dry mill process. This is essentially washed coffee, but it is called Dry Hull locally.
Generally, Dry Hull is considered to be of higher quality because it involves a longer drying period, less damage and fewer defects due to hulling in a dry state, and the ability to perform color sorting and other selections using the latest dry mill equipment. However, due to the influence of rain and humidity on drying speed, good profitability, and the scale of farmers' production, the traditional Sumatra process remains dominant in the country.
